Simple Chicken & Chorizo Paella
Ingredients
- 1.5 lbs chicken thighs, cut
- 4 oz chorizo, sliced
- 1 onion, chopped
- 1 cup paella rice
- 3 cups chicken broth
- Pinch of saffron threads
- 1/2 cup peas
Steps
- Heat oil in a paella pan or large skillet. Brown chicken and chorizo. Remove.
- Sauté onion until soft. Add rice and stir for 2 minutes.
- Stir in broth and saffron. Bring to a simmer. Return chicken and chorizo.
- Cook for 15-20 minutes without stirring, until liquid is absorbed and rice is tender. Stir in peas.
- Let stand for 5 minutes before serving.
