Simple Ghanaian Jollof Rice

Ingredients

  • 2 cups basmati rice, washed
  • 1/4 cup vegetable oil
  • 1 large onion, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup tomato paste
  • 4 cups chicken or vegetable broth
  • 1 scotch bonnet pepper (optional), minced
  • 1 tbsp ginger-garlic paste
  • 1 tsp curry powder
  • 1/2 tsp thyme

Steps

  1. Heat oil in a large pot. Sauté onion until translucent. Add ginger-garlic paste, scotch bonnet, curry powder, and thyme, cook for 2 minutes.
  2. Stir in diced tomatoes and tomato paste. Cook for 10-15 minutes, stirring occasionally, until sauce darkens.
  3. Add broth and bring to a boil. Stir in washed rice. Reduce heat to low, cover tightly, and cook for 25-30 minutes, or until rice is tender and liquid absorbed.
  4. Fluff with a fork and serve hot.
