Simple Ghanaian Jollof Rice
Ingredients
- 2 cups basmati rice, washed
- 1/4 cup vegetable oil
- 1 large onion, chopped
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup tomato paste
- 4 cups chicken or vegetable broth
- 1 scotch bonnet pepper (optional), minced
- 1 tbsp ginger-garlic paste
- 1 tsp curry powder
- 1/2 tsp thyme
Steps
- Heat oil in a large pot. Sauté onion until translucent. Add ginger-garlic paste, scotch bonnet, curry powder, and thyme, cook for 2 minutes.
- Stir in diced tomatoes and tomato paste. Cook for 10-15 minutes, stirring occasionally, until sauce darkens.
- Add broth and bring to a boil. Stir in washed rice. Reduce heat to low, cover tightly, and cook for 25-30 minutes, or until rice is tender and liquid absorbed.
- Fluff with a fork and serve hot.
