Creamy Tomato Soup & Grilled Cheese
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 1 (28 oz) can crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Bread, cheese, butter for grilled cheese
Steps
- Heat olive oil in a pot. Sauté onion until softened.
- Add crushed tomatoes and vegetable broth. Bring to a simmer and cook for 15 minutes.
- Stir in heavy cream, salt, and pepper. Blend with an immersion blender until smooth (or transfer to a regular blender).
- Meanwhile, butter bread slices, add cheese, and grill until golden brown and cheese is melted. Serve soup with grilled cheese.
