Creamy Tomato Soup & Grilled Cheese

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 (28 oz) can crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Bread, cheese, butter for grilled cheese

Steps

  1. Heat olive oil in a pot. Sauté onion until softened.
  2. Add crushed tomatoes and vegetable broth. Bring to a simmer and cook for 15 minutes.
  3. Stir in heavy cream, salt, and pepper. Blend with an immersion blender until smooth (or transfer to a regular blender).
  4. Meanwhile, butter bread slices, add cheese, and grill until golden brown and cheese is melted. Serve soup with grilled cheese.
