Quick Shrimp Paella

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup bomba rice (or arborio)
  • 3 cups chicken broth
  • 1/2 tsp saffron threads
  • 1 lb shrimp, peeled and deveined
  • 1/2 cup frozen peas
  • Lemon wedges for serving

Steps

  1. Heat oil in a large shallow pan, sauté onion and bell pepper.
  2. Add rice, stir for 1 min. Pour in broth and saffron; bring to boil, then reduce heat.
  3. Simmer 15 min, then add shrimp and peas.
  4. Cook another 5-7 min until rice is tender and shrimp are pink. Do not stir too much.
  5. Serve with lemon wedges.
