Quick Shrimp Paella
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 cup bomba rice (or arborio)
- 3 cups chicken broth
- 1/2 tsp saffron threads
- 1 lb shrimp, peeled and deveined
- 1/2 cup frozen peas
- Lemon wedges for serving
Steps
- Heat oil in a large shallow pan, sauté onion and bell pepper.
- Add rice, stir for 1 min. Pour in broth and saffron; bring to boil, then reduce heat.
- Simmer 15 min, then add shrimp and peas.
- Cook another 5-7 min until rice is tender and shrimp are pink. Do not stir too much.
- Serve with lemon wedges.
