Vegetable Chickpea Tagine

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 can chickpeas, drained
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 2 tsp Ras el Hanout spice blend
  • Couscous for serving

Steps

  1. Heat oil in a tagine or pot, sauté onion.
  2. Add carrots, zucchini, chickpeas, and diced tomatoes; stir.
  3. Stir in Ras el Hanout and vegetable broth.
  4. Bring to a simmer, cover, and cook for 45-60 minutes until vegetables are tender.
  5. Serve hot over couscous.
