Ingredients
- 2 cups pre-cooked white cornmeal (masarepa)
- 2.5 cups warm water
- 1 tsp salt
- 1 cup shredded mozzarella cheese
Steps
- Mix cornmeal, water, and salt; knead until a smooth dough forms.
- Let rest 5 minutes, then divide into 8 balls.
- Flatten balls into discs, stuff with cheese, reshape.
- Cook on a lightly oiled griddle over medium heat 5-7 min per side.
- Serve warm with butter or a filling of choice.
