After a long week, a proper plate of fish and chips by the coast just helps me unwind. There’s nothing like the salty air and crispy batter to get me into a relaxed mood.

Crispy Oven-Baked Fish and Chips

Ingredients

  • 2 large potatoes, cut into fries
  • 1 lb cod fillets
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup sparkling water
  • Oil for frying (for chips)

Steps

  1. Preheat oven to 400F (200C). Toss fries with oil, salt, pepper; bake 25-30 min.
  2. Whisk flour, baking powder, salt, and sparkling water for batter.
  3. Dip fish in batter, then pan-fry or bake until golden and cooked.
  4. Serve fish and chips with lemon wedges and tartar sauce.
