Simple Cucumber Avocado Rolls
Ingredients
- 2 cups sushi rice
- 2 sheets nori
- 1/2 cucumber, julienned
- 1 avocado, sliced
- Rice vinegar (for sushi rice)
Steps
- Prepare sushi rice according to package directions, mixing in rice vinegar.
- Lay nori sheet on bamboo mat, spread rice thinly.
- Arrange cucumber and avocado on rice.
- Roll tightly using the bamboo mat.
- Slice into bite-sized pieces.
