Simple Chicken Congee
Ingredients
- 1 cup short-grain rice
- 8 cups chicken broth
- 1-2 chicken thighs or breast
- 1 inch ginger, sliced
- Salt to taste
- Optional: scallions, soy sauce
Steps
- Rinse rice thoroughly. In a large pot, combine rinsed rice, chicken broth, chicken pieces, and ginger slices.
- Bring to a boil, then reduce heat to low, cover, and simmer for at least 1 hour, stirring occasionally, until rice breaks down into a creamy porridge.
- Remove chicken and ginger. Shred chicken and return to the pot. Season with salt.
- If congee is too thick, add a little more hot water or broth. If too thin, simmer uncovered for a bit longer.
- Serve hot, garnished with chopped scallions and a drizzle of soy sauce if desired.
