After a really exhausting day, a simple bowl of congee is exactly what I need. It’s light, warm, and easy to digest, making me feel nourished and ready to rest. It’s my go-to for gentle comfort.

Simple Chicken Congee

1 hour 30 minutes • Easy

Ingredients

  • 1 cup short-grain rice
  • 8 cups chicken broth
  • 1-2 chicken thighs or breast
  • 1 inch ginger, sliced
  • Salt to taste
  • Optional: scallions, soy sauce

Steps

  1. Rinse rice thoroughly. In a large pot, combine rinsed rice, chicken broth, chicken pieces, and ginger slices.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for at least 1 hour, stirring occasionally, until rice breaks down into a creamy porridge.
  3. Remove chicken and ginger. Shred chicken and return to the pot. Season with salt.
  4. If congee is too thick, add a little more hot water or broth. If too thin, simmer uncovered for a bit longer.
  5. Serve hot, garnished with chopped scallions and a drizzle of soy sauce if desired.
