Hearty Shepherd's Pie

Ingredients

  • 1.5 lbs ground lamb or beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup beef broth
  • 4 large potatoes, mashed

Steps

  1. Preheat oven to 375°F (190°C). Brown ground meat in a skillet, drain fat. Add onion and carrots, cook until softened.
  2. Stir in peas and beef broth. Simmer for 10 minutes until slightly thickened. Season with salt and pepper.
  3. Transfer meat mixture to an oven-safe dish. Top evenly with mashed potatoes, spreading to the edges.
  4. Use a fork to create ridges on the potato topping. Bake for 25-30 minutes, or until golden brown and bubbly.
  5. Let stand for a few minutes before serving.
