A bowl of Koshary always makes me pause and reflect. It’s a dish with so many layers and textures, just like life itself. Each bite brings a unique blend of flavors that makes me think. It’s truly a journey for the senses.

Hearty Egyptian Koshary

Ingredients

  • 1 cup rice
  • 1 cup lentils
  • 1 cup macaroni
  • 1 can chickpeas
  • Fried crispy onions
  • Tomato sauce (dakka and shatta)

Steps

  1. Cook rice, lentils, and macaroni separately according to package directions. Drain and set aside.
  2. Prepare tomato sauce: Sauté garlic, add canned tomatoes, vinegar, and spices (cumin, chili). Simmer.
  3. To assemble: Layer rice, then lentils, then macaroni in a bowl. Top with chickpeas.
  4. Ladle generous amounts of tomato sauce over the layers. Garnish with crispy fried onions.
  5. Serve with optional spicy chili sauce (shatta) and garlic vinegar (dakka) on the side.
