On a lazy Sunday morning, nothing makes me feel more relaxed and happy than a stack of warm blueberry pancakes. It’s the perfect start to a peaceful day.
Fluffy Blueberry Pancakes
Ingredients
- 1 cup all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 large egg
- 2 tbsp melted butter
- 1/2 cup fresh or frozen blueberries
- Maple syrup for serving
Steps
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk milk, egg, and melted butter. Pour wet ingredients into dry ingredients and mix until just combined (a few lumps are okay). Gently fold in blueberries.
- Heat a lightly oiled griddle or non-stick pan over medium heat. Pour about 1/4 cup of batter per pancake.
- Cook for 2-3 minutes per side, until golden brown and cooked through. Serve immediately with maple syrup.
