On a lazy Sunday morning, nothing makes me feel more relaxed and happy than a stack of warm blueberry pancakes. It’s the perfect start to a peaceful day.

Fluffy Blueberry Pancakes

25 minutes • Easy

Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter
  • 1/2 cup fresh or frozen blueberries
  • Maple syrup for serving

Steps

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk milk, egg, and melted butter. Pour wet ingredients into dry ingredients and mix until just combined (a few lumps are okay). Gently fold in blueberries.
  3. Heat a lightly oiled griddle or non-stick pan over medium heat. Pour about 1/4 cup of batter per pancake.
  4. Cook for 2-3 minutes per side, until golden brown and cooked through. Serve immediately with maple syrup.
