I love trying new flavors, and recently I’ve become obsessed with Kimchi Fried Rice. Every bite is an adventure with its tangy, savory, and spicy notes!
Spicy Kimchi Fried Rice (Kimchi Bokkeumbap)
Ingredients
- 2 cups cooked day-old rice
- 1 cup chopped kimchi
- 1 tbsp kimchi juice
- 1 tbsp gochujang (Korean chili paste)
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1/2 cup chopped cooked pork or spam (optional)
- 1 egg, fried, for topping
- 2 green onions, sliced
Steps
- Heat sesame oil in a large skillet or wok over medium-high heat. Add kimchi and cook for 2-3 minutes.
- Stir in pork or spam (if using) and cook for another 2 minutes. Add rice, gochujang, kimchi juice, and soy sauce. Stir-fry for 5-7 minutes, breaking up any clumps, until rice is heated through and slightly crispy.
- Serve immediately, topped with a fried egg and sliced green onions.
