When I’m feeling really energetic and craving something vibrant, Pad Thai is my go-to. The explosion of sweet, sour, and savory flavors always gets me excited!
Quick Chicken Pad Thai
Ingredients
- 8 oz flat rice noodles
- 1 tbsp vegetable oil
- 8 oz chicken breast (thinly sliced)
- 1 large egg (beaten)
- 1 cup bean sprouts
- 1/4 cup chopped roasted peanuts
- 2 green onions (sliced)
- 1/2 cup Pad Thai sauce
- Lime wedges for serving
Steps
- Cook rice noodles according to package directions until al dente. Drain and set aside.
- Heat oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through. Push chicken to one side of the pan.
- Pour beaten egg onto the empty side of the pan and scramble. Once cooked, break it up and mix with the chicken.
- Add the cooked noodles and Pad Thai sauce to the pan. Toss everything together to coat the noodles evenly.
- Stir in bean sprouts and green onions, cook for another 1-2 minutes until heated through. Serve immediately, garnished with chopped peanuts and lime wedges.
