Quick Chicken Pad Thai

Ingredients

  • 8 oz flat rice noodles
  • 1 tbsp vegetable oil
  • 8 oz chicken breast (thinly sliced)
  • 1 large egg (beaten)
  • 1 cup bean sprouts
  • 1/4 cup chopped roasted peanuts
  • 2 green onions (sliced)
  • 1/2 cup Pad Thai sauce
  • Lime wedges for serving

Steps

  1. Cook rice noodles according to package directions until al dente. Drain and set aside.
  2. Heat oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through. Push chicken to one side of the pan.
  3. Pour beaten egg onto the empty side of the pan and scramble. Once cooked, break it up and mix with the chicken.
  4. Add the cooked noodles and Pad Thai sauce to the pan. Toss everything together to coat the noodles evenly.
  5. Stir in bean sprouts and green onions, cook for another 1-2 minutes until heated through. Serve immediately, garnished with chopped peanuts and lime wedges.
