On a quiet morning, a warm bowl of miso soup always brings me such peace. It’s a simple, nourishing start to the day that grounds me.

Basic Miso Soup

15 minutes • Easy

Ingredients

  • 4 cups dashi stock
  • 4 tbsp miso paste
  • 4 oz firm tofu (cubed)
  • 2 tbsp dried wakame seaweed
  • 2 green onions (sliced)

Steps

  1. Rehydrate wakame in a small bowl of water for 5 minutes, then drain.
  2. Heat dashi stock in a pot over medium heat until just before boiling. Reduce heat to low.
  3. In a small bowl, whisk miso paste with a ladleful of hot dashi until smooth, then stir back into the pot.
  4. Add cubed tofu and rehydrated wakame. Simmer gently for 2-3 minutes, without boiling.
  5. Serve hot, garnished with sliced green onions.
