Basic Miso Soup
Ingredients
- 4 cups dashi stock
- 4 tbsp miso paste
- 4 oz firm tofu (cubed)
- 2 tbsp dried wakame seaweed
- 2 green onions (sliced)
Steps
- Rehydrate wakame in a small bowl of water for 5 minutes, then drain.
- Heat dashi stock in a pot over medium heat until just before boiling. Reduce heat to low.
- In a small bowl, whisk miso paste with a ladleful of hot dashi until smooth, then stir back into the pot.
- Add cubed tofu and rehydrated wakame. Simmer gently for 2-3 minutes, without boiling.
- Serve hot, garnished with sliced green onions.
