Hearty Egyptian Lentil Soup

Ingredients

  • Red lentils
  • Onion
  • Carrot
  • Potato
  • Cumin
  • Lemon juice

Steps

  1. Rinse lentils and add to a pot with chopped onion, carrot, and potato.
  2. Cover with water or broth, bring to a boil, then simmer until vegetables are tender.
  3. Blend the soup until smooth (optional).
  4. Stir in cumin and a squeeze of fresh lemon juice before serving.
  5. Garnish with a sprinkle of chopped parsley if you like.
