Sunday morning pancakes are my favorite way to be playful with food! Stacking them high and adding all sorts of toppings just brings out the kid in me.
Fluffy Buttermilk Pancakes
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/4 cups buttermilk
- 1 large egg
- 2 tbsp melted butter, plus more for cooking
Steps
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk buttermilk, egg, and melted butter.
- Pour wet ingredients into dry ingredients and mix until just combined (a few lumps are okay).
- Heat a lightly buttered griddle or non-stick pan over medium heat. Pour 1/4 cup of batter per pancake. Cook for 2-3 minutes per side, until golden brown and cooked through. Serve with syrup and desired toppings.
