Classic Chicken Noodle Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup egg noodles
- Salt and pepper to taste
- Fresh parsley, chopped
Steps
- Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened, about 5-7 minutes.
- Pour in chicken broth and bring to a boil. Add shredded chicken and egg noodles.
- Cook for 8-10 minutes, or until noodles are tender.
- Season with salt and pepper. Stir in fresh parsley before serving.
