When I’m under the weather or just needing a hug, chicken noodle soup is my go-to. It’s warm, soothing, and always makes me feel comforted and cared for.

Classic Chicken Noodle Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup egg noodles
  • Salt and pepper to taste
  • Fresh parsley, chopped

Steps

  1. Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened, about 5-7 minutes.
  2. Pour in chicken broth and bring to a boil. Add shredded chicken and egg noodles.
  3. Cook for 8-10 minutes, or until noodles are tender.
  4. Season with salt and pepper. Stir in fresh parsley before serving.
