Sunday roast chicken makes me incredibly grateful for family and good food. The aroma filling the house and everyone gathered around the table is just perfect.
Simple Roast Chicken
Ingredients
- 1 (3-4 lb) whole chicken
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried herbs (rosemary or thyme)
- 1 lemon, halved
Steps
- Preheat oven to 400°F (200°C).
- Pat chicken dry with paper towels. Rub with olive oil, salt, pepper, and dried herbs.
- Place lemon halves inside the chicken cavity.
- Roast for 60-75 minutes, or until internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Let rest 10 minutes before carving.
