Sunday roast chicken makes me incredibly grateful for family and good food. The aroma filling the house and everyone gathered around the table is just perfect.

Simple Roast Chicken

Ingredients

  • 1 (3-4 lb) whole chicken
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried herbs (rosemary or thyme)
  • 1 lemon, halved

Steps

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken dry with paper towels. Rub with olive oil, salt, pepper, and dried herbs.
  3. Place lemon halves inside the chicken cavity.
  4. Roast for 60-75 minutes, or until internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Let rest 10 minutes before carving.
