Ethiopian Misir Wot (Red Lentil Stew)

Ingredients

  • Red lentils
  • Onion
  • Garlic
  • Ginger
  • Berbere spice blend
  • Tomato paste
  • Vegetable oil
  • Water

Steps

  1. Sauté finely chopped onion in vegetable oil until softened, then add minced garlic and ginger.
  2. Stir in berbere spice blend and tomato paste, cooking for a minute to toast the spices.
  3. Add red lentils and water, bring to a boil, then reduce heat and simmer until lentils are tender and stew has thickened.
  4. Serve hot with injera or rice.
