Easy Chicken Green Curry
Ingredients
- 1 tbsp vegetable oil
- 1 lb chicken breast, sliced
- 4 oz green curry paste
- 1 can (13.5 oz) coconut milk
- 1 cup chicken broth
- 1 bell pepper, sliced
- 1/2 cup bamboo shoots (canned)
- Fresh basil leaves (for garnish)
- Cooked jasmine rice (for serving)
Steps
- Heat oil in a large pot or wok. Add chicken and cook until browned.
- Stir in green curry paste and cook for 1 minute until fragrant.
- Pour in coconut milk and chicken broth, bring to a simmer.
- Add bell pepper and bamboo shoots. Cook for 5-7 minutes until vegetables are tender-crisp.
- Serve hot over jasmine rice, garnished with fresh basil.
