After a long week, a flavorful green curry is my perfect way to recharge and feel energized again. The aromatic spices always perk me right up!

Easy Chicken Green Curry

Ingredients

  • 1 tbsp vegetable oil
  • 1 lb chicken breast, sliced
  • 4 oz green curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 bell pepper, sliced
  • 1/2 cup bamboo shoots (canned)
  • Fresh basil leaves (for garnish)
  • Cooked jasmine rice (for serving)

Steps

  1. Heat oil in a large pot or wok. Add chicken and cook until browned.
  2. Stir in green curry paste and cook for 1 minute until fragrant.
  3. Pour in coconut milk and chicken broth, bring to a simmer.
  4. Add bell pepper and bamboo shoots. Cook for 5-7 minutes until vegetables are tender-crisp.
  5. Serve hot over jasmine rice, garnished with fresh basil.
