Easy Shepherd's Pie

Ingredients

  • 1 lb ground beef or lamb
  • 1 onion, chopped
  • 1 cup mixed vegetables (peas, carrots)
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 2 lbs potatoes, mashed

Steps

  1. Brown ground meat and onion in a pan. Drain excess fat.
  2. Stir in mixed vegetables, beef broth, and tomato paste. Simmer for 10 minutes.
  3. Pour meat mixture into an oven-safe dish.
  4. Top with mashed potatoes, spreading evenly. Create peaks with a fork.
  5. Bake at 375°F (195°C) for 25-30 minutes, until golden brown and bubbly.
