On my day off, when I just want to relax and unwind, I always treat myself to some fresh sushi. The delicate flavors and presentation make it feel like a little luxurious escape.
Simple Cucumber Maki
Ingredients
- 1 cup sushi rice, cooked and seasoned
- 2 sheets nori (seaweed)
- 1/2 cucumber, cut into thin strips
- Soy sauce (for serving)
Steps
- Lay a sheet of nori on a bamboo mat.
- Spread a thin, even layer of sushi rice over 2/3 of the nori, leaving a border.
- Place cucumber strips in a line across the center of the rice.
- Using the mat, carefully roll the nori tightly from the end with the rice.
- Wet the un-covered edge to seal the roll. Slice into 6-8 pieces and serve with soy sauce.
