When the sun is high and I’m ready for a relaxing siesta, a chilled bowl of gazpacho is my perfect companion. It’s so refreshing and light, always making me feel cool and content. My ideal summer meal.
Refreshing Gazpacho
Ingredients
- 4 large ripe tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 green bell pepper, chopped
- 1/2 red onion, chopped
- 2 cloves garlic, minced
- 2 tbsp red wine vinegar
- 1/4 cup olive oil
- Salt and pepper to taste
Steps
- Combine all chopped vegetables, garlic, vinegar, and olive oil in a blender.
- Blend until smooth. Season with salt and pepper.
- Pour into a pitcher or bowl and chill in the refrigerator for at least 1 hour.
- Serve cold, optionally garnished with croutons or finely diced vegetables.
