When the sun is high and I’m ready for a relaxing siesta, a chilled bowl of gazpacho is my perfect companion. It’s so refreshing and light, always making me feel cool and content. My ideal summer meal.

Refreshing Gazpacho

20 minutes (plus chilling) • Easy

Ingredients

  • 4 large ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 green bell pepper, chopped
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Steps

  1. Combine all chopped vegetables, garlic, vinegar, and olive oil in a blender.
  2. Blend until smooth. Season with salt and pepper.
  3. Pour into a pitcher or bowl and chill in the refrigerator for at least 1 hour.
  4. Serve cold, optionally garnished with croutons or finely diced vegetables.
