When the British weather gets me down, nothing lifts my spirits like a generous portion of hot, crispy fish and chips. It’s the ultimate comfort food for a grey, rainy day. Always hits the spot!

Classic Fish and Chips

40 minutes • Medium

Ingredients

  • 2 large cod fillets
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup cold sparkling water
  • Vegetable oil for frying
  • 2 large potatoes (for chips)
  • Salt and vinegar to taste

Steps

  1. Cut potatoes into thick chips, rinse, and pat dry. Fry at 325°F (160°C) for 5-7 minutes until soft, then drain.
  2. For batter, whisk flour, baking powder, and sparkling water until smooth. Dip fish fillets into batter.
  3. Heat oil to 375°F (190°C). Fry fish for 5-7 minutes until golden and cooked through.
  4. Increase oil temperature to 375°F (190°C). Re-fry chips until golden and crispy.
  5. Serve hot with salt and plenty of vinegar.
