Classic Fish and Chips
Ingredients
- 2 large cod fillets
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 cup cold sparkling water
- Vegetable oil for frying
- 2 large potatoes (for chips)
- Salt and vinegar to taste
Steps
- Cut potatoes into thick chips, rinse, and pat dry. Fry at 325°F (160°C) for 5-7 minutes until soft, then drain.
- For batter, whisk flour, baking powder, and sparkling water until smooth. Dip fish fillets into batter.
- Heat oil to 375°F (190°C). Fry fish for 5-7 minutes until golden and cooked through.
- Increase oil temperature to 375°F (190°C). Re-fry chips until golden and crispy.
- Serve hot with salt and plenty of vinegar.
