Hearty Vegetarian Borscht

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 beets, peeled and shredded
  • 2 carrots, shredded
  • 4 cups vegetable broth
  • 1/2 head cabbage, shredded
  • 1 potato, diced
  • 1/4 cup tomato paste
  • Dill and sour cream for serving

Steps

  1. Sauté onion, beets, and carrots in olive oil until softened.
  2. Add vegetable broth, cabbage, potato, and tomato paste. Bring to a boil, then reduce heat and simmer for 30 minutes, or until vegetables are tender.
  3. Season with salt and pepper to taste. Ladle into bowls.
  4. Serve hot with a dollop of sour cream and fresh dill.
