Sunny Lemon Meringue Pie
Ingredients
- 1 pre-baked 9-inch pie crust
- 1 1/2 cups granulated sugar
- 1/4 cup cornstarch
- 1/2 cup fresh lemon juice
- 4 large egg yolks
- 4 large egg whites
- Pinch of cream of tartar
Steps
- Preheat oven to 350°F (175°C).
- For the filling: Whisk 1 cup sugar, cornstarch, and lemon juice in a saucepan. Cook over medium heat until thickened. Whisk in egg yolks gradually, cook for 1 minute more. Pour into pie crust.
- For the meringue: Beat egg whites with cream of tartar until soft peaks form. Gradually add remaining 1/2 cup sugar, beating until stiff, glossy peaks form.
- Spread meringue over hot lemon filling, sealing to edges of crust. Bake for 12-15 minutes, or until meringue is golden brown. Cool completely before serving.
