Sunny Lemon Meringue Pie

Ingredients

  • 1 pre-baked 9-inch pie crust
  • 1 1/2 cups granulated sugar
  • 1/4 cup cornstarch
  • 1/2 cup fresh lemon juice
  • 4 large egg yolks
  • 4 large egg whites
  • Pinch of cream of tartar

Steps

  1. Preheat oven to 350°F (175°C).
  2. For the filling: Whisk 1 cup sugar, cornstarch, and lemon juice in a saucepan. Cook over medium heat until thickened. Whisk in egg yolks gradually, cook for 1 minute more. Pour into pie crust.
  3. For the meringue: Beat egg whites with cream of tartar until soft peaks form. Gradually add remaining 1/2 cup sugar, beating until stiff, glossy peaks form.
  4. Spread meringue over hot lemon filling, sealing to edges of crust. Bake for 12-15 minutes, or until meringue is golden brown. Cool completely before serving.
