Quick Feijoada (Black Bean Stew)
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 lb smoked sausage (linguica or chorizo), sliced
- 2 cans (15 oz each) black beans, undrained
- 1 cup chicken broth
- Cooked rice and collard greens for serving
Steps
- Heat oil in a large pot. Sauté onion and garlic until fragrant.
- Add sliced sausage and cook until browned. Drain any excess fat.
- Stir in black beans (with their liquid) and chicken broth. Bring to a simmer.
- Reduce heat and cook, uncovered, for 45-60 minutes, stirring occasionally, until the sauce thickens slightly. Serve hot with rice and collard greens.
