After a busy week, a plate of fresh sushi rolls always leaves me feeling refreshed and light. It’s my favorite way to reset and enjoy some quiet time.

Simple Veggie Sushi Rolls

40 minutes • Easy

Ingredients

  • 2 cups cooked sushi rice
  • 4 sheets nori (seaweed)
  • 1/2 cucumber, julienned
  • 1/2 avocado, sliced
  • 1 carrot, julienned
  • Soy sauce and wasabi for serving

Steps

  1. Place a nori sheet on a bamboo mat. Spread a thin layer of sushi rice evenly over nori, leaving a 1/2-inch border at the top.
  2. Arrange cucumber, avocado, and carrot strips horizontally across the center of the rice.
  3. Using the mat, tightly roll the nori from the bottom up. Moisten the top edge of the nori with water to seal.
  4. Slice the roll into 6-8 pieces with a sharp, wet knife. Serve with soy sauce and wasabi.
