After a busy week, a plate of fresh sushi rolls always leaves me feeling refreshed and light. It’s my favorite way to reset and enjoy some quiet time.
Simple Veggie Sushi Rolls
Ingredients
- 2 cups cooked sushi rice
- 4 sheets nori (seaweed)
- 1/2 cucumber, julienned
- 1/2 avocado, sliced
- 1 carrot, julienned
- Soy sauce and wasabi for serving
Steps
- Place a nori sheet on a bamboo mat. Spread a thin layer of sushi rice evenly over nori, leaving a 1/2-inch border at the top.
- Arrange cucumber, avocado, and carrot strips horizontally across the center of the rice.
- Using the mat, tightly roll the nori from the bottom up. Moisten the top edge of the nori with water to seal.
- Slice the roll into 6-8 pieces with a sharp, wet knife. Serve with soy sauce and wasabi.
